The holidays are upon us and in the spirit of that I wanted to provide a few recipes that look great and can help you stay within your nutritional guidelines!

Maple Cinnamon Roasted Butternut Squash:

NGREDIENTS
- 8 cups cubed butternut squash (peeled and seeded), about 3 lbs of peeled cubes
- 2 tbsp extra virgin olive oil
- 2 tbsp maple syrup
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 pinches cayenne
YOU WILL ALSO NEED
- 2 baking sheets, foil (optional)

- ¼ cup fresh tarragon chopped (or substitute with 3 Tbsp good quality Dried Tarragon

- 2 Tbsp cooking fat (I used 1 Tbsp each of Tallow and Extra Virgin Coconut Oil; Unsalted Butter
would work too)
- Fresh lemon to garnish

Chocolate Chip “Oatmeal” Cookies

Ingredients:
- ¾ cups extra virgin coconut oil, melted and cooled
- 2/3 cups Muscovado Sugar
- 1 egg
- 1½ cups Blanched Almond Flour
- 1 tsp Vanilla Extract
- ¾ tsp Baking Soda
- ½ tsp Cream of Tartar
- ½ tsp Salt
- 1 Tbsp Brown Sesame Seeds
- 2 Tbsp Flaxseed Meal
- ½ cup finely Shredded Unsweetened Coconut
- ¼ cup Macadamia Nuts
- ¼ cup raw Pecans
- ¼ cup Sliced Almonds
- 2 Tbsp Raw Sunflower Seeds
- ½ cup Mini Chocolate Chips
or Raisins

There is always a solution if you are willing to look. A couple of these are Paleo, Gluten-free, one is even Vegan so its all about teaching out what you are looking to accomplish.
